Vinification and aging:
after harvest, manual selection on sorting table, alcoholic fermentation with selected yeasts with temperature control at 26°C, maceration for 25-30 days with pump-overs exposed to air and manual punching down of the cap until the end of fermentation (12-15 days), spontaneous malolactic fermentation in large oak vats and used barrels. Viandante ages for 24 months on the lees in used French oak barrels and 42hl oak vats with regular batonnage, minimum 6 months bottle aging at Tenuta l’Impostino before release.
