This wine from Podere Montale is obtained from the Sangiovese vineyard named “La Casetta” (“The Little House”) at an altitude of 450 meters with southwest sun exposure. Fermentation takes place on the skins for about 15-20 days at a controlled temperature (27-28°C). This phase is followed by malolactic fermentation in stainless steel tanks, specially designed for the delicate extraction of tannins and color. After this process, “La Casetta” is aged for 24 months: the first 12 months in 500-liter oak barrels, the second 12 months in 3000-liter oak barrels. Finally, the wine is bottled and stored, allowing it to continue aging.
